Bare Pantry Potato Soup
This is one of my favorite soups, even though the ingredients are very simple.

What You'll Need :
- 2 medium potatoes peeled, diced
- 1 medium onion diced
- 3 cloves garlic
- 1 teaspoon celery seed
- 2 cups vegetable stock or water
- 1 cup milk
- salt and pepper to taste
- 1/2 tablespoon vegetable oil
- 1 tablespoon butter
What To Do
- Heat oil in a medium soup pot over medium high heat.
- Add onion and sauté until translucent.
- Add garlic, stir and add diced potatoes.
- Sauté for 2 minutes, then add the stock or water.
- Boil for 5 minutes then reduce to very low boil.
- Simmer for 20 minutes until potatoes are nice and soft.
- Add warm milk. Crush some of the potatoes against the side of the pan. This will release some more of the starches and thicken the soup a bit.
- Simmer for 15 minutes.
- Garnish with a dollop of butter and some dill. Serve with warm bread.
