Bare Pantry Potato Soup


This is one of my favorite soups, even though the ingredients are very simple.

Great for Thanksgiving day!

What You'll Need :

  • 2 medium potatoes peeled, diced
  • 1 medium onion diced
  • 3 cloves garlic
  • 1 teaspoon celery seed
  • 2 cups vegetable stock or water
  • 1 cup milk
  • salt and pepper to taste
  • 1/2 tablespoon vegetable oil
  • 1 tablespoon butter

What To Do

  • Heat oil in a medium soup pot over medium high heat.
  • Add onion and sauté until translucent.
  • Add garlic, stir and add diced potatoes.
  • Sauté for 2 minutes, then add the stock or water.
  • Boil for 5 minutes then reduce to very low boil.
  • Simmer for 20 minutes until potatoes are nice and soft.
  • Add warm milk. Crush some of the potatoes against the side of the pan. This will release some more of the starches and thicken the soup a bit.
  • Simmer for 15 minutes.
  • Garnish with a dollop of butter and some dill. Serve with warm bread.
