Gringo Pork Chili
One of my favorite meals! Quick, easy and delicious.
This recipe can easily be made vegetarian, just omit the pork. Actually, I usually make it that way myself.
Serve with cheese and onions, over corn chips, or for something a little different try it over spaghetti.

What You'll Need :
- 1 medium onion chopped
- 2 cloves garlic minced
- 2 small pork cutlets, diced
- 1 jalapeno finely chopped
- 1 can red kidney beans
- 1 can chopped tomato
- 2/3 cup water or stock
- cayenne
- paprika
- Tabasco sauce
- brown sugar
- cider vinegar
What to Do:
- Heat large skillet over med to med-hi heat
- Add peanut or vegetable oil
- Add onions and jalapeno cook for 2-3 minutes - until onions are slightly brown
- Add pork and sear to lock in th juices
- Add garlic, stir for 15 seconds
- Add beans, tomatoes and water (or stock)
- Bring to boil reduce heat, simmer and add seasonings
- Simmer for 30 mins to 2 hours - the longer the better.
- Add more liquid if needed
