Mom's Fried Rice
A healthy, one dish meal
This is my Mother's homemade fired rice recipe. I ate this delicious dish twice while on vacation. It's one of my Dad's favorites, and I definitely agree with him. Very easy to make, and surprisingly good.
It also turns out to be quite healthy, except for a fairly high salt content from the soy.

What You'll Need
- 3 oz. onion, diced
- 2 oz. bell pepper, diced
- 2 oz. celery, finely diced
- 2 eggs
- 4 oz. cooked ham, diced
- 2 cups of cooked Jasmine rice, preferable cooled
- 2 tblsp soy sauce
- Salt and pepper to taste
- 2 tsp. oil
What To Do
- Heat the oil in a large non-stick skillet.
- Saute' the veggies for a minute of two then move them to the edges of the pan. This makes room to cook the eggs.
- Scramble eggs then mix in the veggies.
- Reduce the heat a bit and add the rice. Stir for 2 or three minutes to heat and separate the rice.
- Add the cooked ham. Cooked chicken, shrimp or other leftovers would also be good.
- Add the soy sauce. Enough for a nice golden color and good taste.
- Stir, cook for another minute or two, then eat!
