Mom's Fried Rice


A healthy, one dish meal

This is my Mother's homemade fired rice recipe. I ate this delicious dish twice while on vacation. It's one of my Dad's favorites, and I definitely agree with him. Very easy to make, and surprisingly good.

It also turns out to be quite healthy, except for a fairly high salt content from the soy.

Easy, Delicious Fried Rice

What You'll Need

  • 3 oz. onion, diced
  • 2 oz. bell pepper, diced
  • 2 oz. celery, finely diced
  • 2 eggs
  • 4 oz. cooked ham, diced
  • 2 cups of cooked Jasmine rice, preferable cooled
  • 2 tblsp soy sauce
  • Salt and pepper to taste
  • 2 tsp. oil

What To Do

  • Heat the oil in a large non-stick skillet.
  • Saute' the veggies for a minute of two then move them to the edges of the pan. This makes room to cook the eggs.
  • Scramble eggs then mix in the veggies.
  • Reduce the heat a bit and add the rice. Stir for 2 or three minutes to heat and separate the rice.
  • Add the cooked ham. Cooked chicken, shrimp or other leftovers would also be good.
  • Add the soy sauce. Enough for a nice golden color and good taste.
  • Stir, cook for another minute or two, then eat!
