Two Tomato Salsa Recipe


A quick and fresh alternative to store-bought salsa.

A few years ago I got fed up with the poor selection of bottled salsas at my local grocery store, so I decided to make my own.

This is what I came up with. It's simple and delicious. I liked it so much I've made it this way ever since.

If you like your salsa on the hot side you can leave the seeds in the jalepeno, or add some crushed red pepper.

What You'll Need :

  • 2 tomatoes peeled and seeded
  • 1/2 medium onion diced fine
  • 1 jalapeno diced, seeds removed
  • 1 clove garlic diced fine
  • 1 lime
  • 1 oz cilantro minced
  • salt and pepper

What To Do:

  • Boil some water in a small pot, just enough to cover the tomatoes.
  • Place tomatoes in the water and boil for 10 to 15 seconds. Remove and run under cold water.
  • Now the skins will be easy to remove. Slice a bit of skin with your knife and pull the skin off. A great time saver!
  • Remove seeds and dice the tomato.
  • Mince garlic and dice the jalepeno. Roast in a hot pan for 2 mins, stirring - no oil. Add to mixture.
  • Dice onions and add to the mixture along with the juice of one lime and minced cilantro.
  • Add pepper to taste. Don't add the salt until you're ready to serve. This will keep the salsa from getting runny.
